Yoon Jung Jang, PhD, RD is an assistant professor of Food Service & Culinary Arts Management, School of Hotel, Restaurant, & Culinary Arts, Woosong University, Korea. She holds a Ph.D. from Iowa State University in Hospitality Management. She specializes in restaurant sustainability and performed many relevant research which include: investigating the role of top managers’ values, leadership, and stakeholder engagement in promoting environmental sustainability; assessing the environmental sustainability performance of independent- and chain- restaurants in the U.S.; examining the moderating role of chain affiliation in stakeholder engagement model; and exploring the role of customers’ green consciousness in evaluating emotional attachment and loyalty to environmentally friendly restaurants. She has been serving as a reviewer in government- funded projects as well as top-tier journals. She has professional experiences in the foodservice industry for many years and now teaches courses on restaurant management and entrepreneurship.
