Breakfast Toast with Hard Boiled Eggs

Ingredients
- 1 slice of whole-grain bread (or your preferred bread)
- 1 ripe avocado
- 1 hard-boiled egg
- Salt and pepper, to taste
- Optional toppings: onion powder, garlic powder, red pepper flakes, chili powder, or a drizzle of hot sauce
Directions
- Hard-Boil the Egg: Place an egg in a saucepan and cover it with water. Bring the water to a boil, then reduce the heat to a simmer. Cook the egg for about 10-12 minutes. Once cooked, transfer the egg to an ice bath or run it under cold water to cool. Peel the egg and slice it into thin rounds.
- Toast the slice of bread to your liking.
- Cut the ripe avocado in half and remove the pit. Scoop out the avocado flesh and mash it with a fork in a bowl. Add a pinch of salt and pepper, and mix well. Spread the mashed avocado evenly onto the toasted bread.
- Arrange the sliced hard-boiled egg on top of the mashed avocado.
- Season the toast with additional salt and pepper according to your taste.
Optional: Sprinkle red pepper flakes, chili powder, onion powder, garlic powder, or add a drizzle of hot sauce for extra flavor
Dorm-Friendly Version
To make this recipe dorm-friendly, follow these instructions for preparing the hard-boiled egg, instead of step 1 above:
Prepare the Hard-Boiled Egg in a Microwave:
- Poke a small hole in the bottom of the egg with a fork before microwaving to prevent it from bursting.
- Place the egg in a microwave-safe bowl, and fill it with water until it is fully submerged underwater, then remove the egg from the water.
- Heat the water in the microwave until very hot, about 3 minutes.
- Mix in the salt. Gently slide the egg into the bowl.
- Microwave for 3 minutes. Then let it stand in the water for 8 minutes.
- Fill a bowl with ice (optional) and cold water and slide the egg in, letting stand for 2 mins. Or run the egg under cold water to prevent it from cooking further. Set aside.
- Peel the egg and slice it into thin rounds.
