Why We Chose This Recipe

These apple nachos are a delicious snack and dessert! They are a dorm-friendly and easy to put together – no cooking required!

Yield: Approximately 5 cups

Ingredients

  • 4 large apples (try varieties like Fuji, Gala, or Honeycrisp for sweetness)
  • 1/4 cup sunflower butter (smooth or crunchy)
  • 1/4 cup mini chocolate chips
  • 1/4 cup shredded coconut
  • 1/4 cup chopped/crushed seeds (such as pumpkin or sunflower seeds)
  • 1/4 cup granola (on top, or served on the side)
  • Optional toppings: honey, cinnamon, or coconut flakes

Directions

  1. Wash the apples thoroughly. Core and slice them into thin rounds or half-moon slices, depending on your preference. Arrange the slices on a large plate or platter, overlapping them slightly to mimic nachos.
  2. If the sunflower butter is too thick to drizzle, gently warm it in a microwave-safe bowl for about 20-30 seconds until it’s more fluid.
  3. Drizzle the sunflower butter over the arranged apple slices. Evenly sprinkle the mini chocolate chips, shredded coconut, and chopped seeds over the apples.
  4. If desired, for additional sweetness, drizzle with honey. Add a sprinkle of cinnamon for warmth or top with granola for extra crunch.

  • The crunchy texture of the apples pair perfectly with the creamy sunflower butter.
  • The versatility of the toppings that can be added to these nachos is great! This allowed students to make apple nachos according to their preferences— some loved coconut flakes, while others preferred extra seeds.

Suggestions

  • Nut-Free Version: We replaced peanut butter with sunflower seed butter and used pumpkin or sunflower seeds instead of nuts. However, if allergies are not a concern, feel free to use nut-based butters and chopped nuts.
  • Other topping ideas include dried fruit like raisins or cranberries, and different types of granola for added texture and varied flavors.
  • Switch up the taste profile of this recipe by trying out various types of apples. We used granny smith apples because their tart flavor serves as a nice contrast to the sweetness of the chocolate chips and sweetened coconut flakes.
