This easy curry uses a variety of spices, sweet potato, garbanzo beans and brown rice for maximum nutrition and flavor. 

 

Looking for a twist on a classic easy ramen? Add in your favorite vegetables and protein to make it a fun and nourishing meal! Join Boston University student Anisha Erasani (SAR, SPH) puts a microwave spin on traditional Asian cuisine by creating her own seasoning and using frozen veggies she has on hand. If you are cooking on a budget, this easy recipe provides maximum flavor and nutrition at a very low cost.

 

Experience the flavors of a New England fruit harvest all year long with this easy, budget-friendly microwaved Fruit Crisp. Watch as Boston University student Ashly Estrada (SAR) uses fruit cup peaches, instant oatmeal, almonds, Greek yogurt, and honey to create this quick, nourishing breakfast or snack. Incorporate frozen or fresh blueberries, pears, apples, or whatever fruit you have on hand.

 

Join Boston University student Edwin Zheng (SAR) as he creates a whole grain salad bowl that will keep anyone full and energized through an afternoon of classes! Fully customizable with any of your favorite veggies, this bowl of hearty goodness is quick, easy, and budget-friendly. Use pre-made rice, chickpeas, and a quick vinaigrette to build your base, then add in any fresh, frozen, or canned veggies you have on hand.

 

Want to enjoy a twist on Mexican street tacos? Take a journey to your favorite food truck with these healthy, inexpensive, and super easy chicken tacos. Boston University student Edwin Zheng (SAT) creates flavorful, customizable, protein-packed chicken tacos with cucumbers, corn, onions, and beans. Experiment with proteins such as tofu or beans, as well as any other veggies you like or have on hand for this quick and nourishing meal.

 

Who says eggs are just for breakfast? Join Boston University student Ashly Estrada (SAR) as she makes a veggie-packed frittata in the microwave that can be enjoyed any time of day. Using eggs, cheese, Greek yogurt and veggies, this frittata is nourishing, and quick and easy to prepare. This dish is also a low cost, budget-friendly way to get lots of protein into your diet.
