Sargent Choice taste tests ask students for culinary input

Hungry, but trying to stay healthy? How about a whole-wheat tortilla filled with black beans and kidney beans, slathered with light sour cream, and sprinkled with low-fat pepper jack cheese. Add lettuce and spices to taste.
That’s the recipe for the Sargent Choice bean burrito featured in the video above, and in the opinion of the overwhelming majority of volunteer student taste testers, it’s a keeper.
“This one is a thumbs-up,” says Stacey Zawacki, director of the Nutrition and Fitness Center at BU’s Sargent College of Health & Rehabilitation Sciences. The goal of the Sargent Choice program, a collaboration between Sargent nutritionists and BU Dining Services, is to improve the eating choices and the health of the BU community.
The burrito is the work of Alison Forte (SAR’09), who is completing an internship at the center. She came up with the bean burrito to meet a recipe-creating requirement for graduate interns.
Zawacki says the Sargent Choice tastings, which take place several times a semester, are always useful and sometimes revealing.
“Students will say things like the appearance of the food should be different,” she says. “Sometimes they’ll say it’s too spicy. Sometimes one student will say it’s too spicy and the next one will say it’s not spicy enough.
“We do use a lot of hot pepper,” she admits.
