- Total Time: 17 min
- Yield: 10 servings
Ingredients
- 1 cup apple cider or apple juice
- ½ cup sugar
- 1 1-inch piece of fresh ginger, peeled and cut into two chunks
- 1 cinnamon stick
- 1 12 ounce bag of fresh cranberries
- 2 medium size sweet apples (such as honeycrisp), peeled and cut into small chunks
Directions
- In a medium saucepan, combine the apple cider or apple juice with the sugar, ginger, and cinnamon stick; bring to a boil over medium-high heat
- Add the cranberries and return to a boil
- Reduce the heat to medium-low and simmer for 10 minutes, stirring occasionally; after 8 minutes, remove the ginger and cinnamon stick with a slotted spoon and then add apples to the pot and allow them to cook for the last 2 minutes, until they are just getting soft, but still retain a slight crunch
- Pour into a dish and let cool for 30 minutes
- Place in the refrigerator to finish chilling; cover when completely chilled
Notes
Do not replace the cinnamon stick with ground cinnamon; the cinnamon stick imparts a more subtle flavor without overwhelming the overall taste.
